Bert Wallace's Monte Carlos

125g Margarine
125g Sugar
1 Egg
3 Teaspoons Honey
Vanilla Essence
300g Self Raising Flour

Cream margarine and butter until light and fluffy, add egg and beat well.

Add honey and vanilla essence, add sifted flour, roll into small balls.

Place on greased tray and flatten out with fork. Bake for about 15 minutes in moderate oven (180c).

Cool on slide and join together with strawberry jam and this filling – cream 30g margarine with 125g icing sugar, add 4 teaspoons strawberry jam and vanilla essence.
