Pumpkin/Kumara and Goats Cheese Muffins
2 cups Self Raising flour
2 cups coarsely grated pumpkin or kumara
2 tbs chives, chopped
2/3 cup buttermilk
125g melted butter
1 egg, beaten
125g goats cheese, cut into 12 cubes
Pre-heat oven to 180 deg C. and grease mini muffin tray.
Sift flour, stir in pumpkin/kumara and half the chives. Combine milk, egg and butter and add to sifted flour (do not over mix). Pour mixture into muffin tray and press piece of goats cheese into each muffin. Sprinkle with chives.
Bake for 25 to 30 minutes. Serve with Sweet Chilli Sauce (see recipe below).
