Okra Stew

500g okra
200g green peas
2 medium potatoes
2 medium green or red capsicums
2 medium tomatoes
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder

Dice the potatoes into 1 cm cubes and fry them in a little oil until golden brown. Cut the tops and tails of the okra and cut into 1 cm cubes. Shallow fry the okras until the stickiness has gone.

Dice the capsicum and shallow fry with the peas for 2 to 3 minutes on a very hot flame. In a spoonful of oil, lightly fry the cumin seeds with the other powered spices for approx 1 minute.

Add the diced tomatoes and stir for 1 to 2 minutes. Add all the fried vegetables, mix well and heat through on a low flame for about 10 minutes.
