Chocolate Souffle

250g semi sweet chocolate
250g whipped cream
4 eggs, separated
2 tbs caster sugar
3 drops vanilla

Melt chocolate and add the egg yolks. In a mixer, beat the egg whites and then very gradually add caster sugar. Continue until the egg whites are very stiff.

Add the egg white mixture to the chocolate - after this has cooled, add the whipped cream.

Pour the chocolate mixture into the egg whites and gently fold in. Add the vanilla. Refrigerate to set.
